1/2 cup oat milk + 1 tsp apple cider vinegar
4 ripe bananas, mashed + 1 banana, sliced (for topping)
1/4 cup vegan butter, melted
2 tbsps pure maple syrup
2 oz Brother’s Bond Bourbon
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
2 tsps baking powder
1/2 tsp baking soda
1/2 cup brown sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 cup vegan chocolate chunks + extra for sprinkling on top
1/2 cup walnuts, roughly chopped
Preheat oven to 375˚F and line a loaf pan with parchment paper.
In a small bowl, whisk together the oat milk and apple cider vinegar. Let the mixture sit for 5-10 minutes, until it thickens slightly.
In a large bowl, combine the 4 mashed bananas, oat milk and apple cider vinegar mixture, melted butter, maple syrup, bourbon, vanilla. Whisk together until well combined.
Add in the flour, cocoa powder, baking powder, baking soda, brown sugar, cinnamon, nutmeg and sea salt. Stir until just combined, be careful to not over-mix.
Gently fold in chocolate chunks and chopped walnuts.
Pour batter in the prepared loaf pan and spread out evenly using a spatula.
Lightly press the banana slices on top of batter and sprinkle with chocolate chunks.
Bake for 60 minutes or until a toothpick or knife that is inserted in the middle comes out clean.
Let it cool for 10-15 minutes before removing from the loaf pan to cool completely.
